(Ketones). β-Hydroxybutyrate and acetoacetate. Produced endogenously by fatty acid βoxidation during caloric or severe carbohydrate restriction, and from medium-chain fatty acids. Exogenous ketones are mostly salts or esters of β-hydroxybutyrate. Acetone is a breakdown product of acetoacetate that is measurable in plasma and on breath (Cunnane et al. 2020)
