Casein is a significant allergen found in milk. It is the primary protein component in cheese, making up about 75%-80% of all the proteins present in milk. Casein is not a single entity but is divided into several families. The most notable of these families are Alfa-S1-casein, Alfa-S2-casein, beta-casein, K-casein (kappa casein), and G-casein (gamma casein).
